Fact
1. Approximately 500 people die from ingesting contaminated food. The most harmful bacteria is Listeria Monocytogenes. Only by fully cooking to a proper temperature can these type of bacterium be killed. (ref Small plant news Vol. 3, No. 2)
2. Any product containing over 2% meat is governed by the USDA all others are a FDA matter.
3. Reg. 9 CFR 317.309(b) "Serving size" means an amount of food customarily consumed per eating occasion by persons 4 years of age or older approximately 114 grams. nutrition label must reflect Piece or pieces closest to 114 grams. Except where regulation specify otherwise.
4. Revised Aug 2011: FSIS Notice 43-11 Single ingredient products now do need nutritional labeling, applies to major cuts of meat/poultry.
5. You also do not need nutrition labeling if your packaging is for industry use, such as restaurants, caterers or schools, although the school may need to know, for them to make a nutritional lunch for the children, your packaging doesn't need it.
